Chol Hamoed in Israel this year runs from Sunday, October 4 – Friday, October 9. It is a time for Israelis to “kick up their feet” and relax a bit from their usual six day work week. Many travel throughout the Land or just stay at home and enjoy the (hopefully) cooler fall weather. Today we even had about 5 drops of rain. Rain is definitely a much needed commodity here in Israel, especially in the desert. After Chol Hamoed, we celebrate Shemini Atzeret which is combined with Simchat Torah. On Shemini Azeret, the Yizkor memorial prayers are recited for the departed. Special prayers for rain (Tefillat Geshem) are recited in the synagogue, as this is the beginning of the rainy season in Israel, where crops depend heavily on abundant rainfall. Simchat Torah marks the end of the cycle of Torah readings for the year and the beginning of a new cycle for the New Year. it is customary to take all the Torah scrolls out of the ark and carry them in procession around the synagogue seven times. The congregation participates in these hakkafot (circlings) with singing and dancing, and the children carry decorated flags.

Dressing:
1/2 cup Olive Oil
1/2 tsp Fresh Chopped Garlic
1/4 cup Chopped Cilantro
Juice from 2 small lemons
Wash and check vegetables. Mix together in large bowl.
Place dressing ingredients in a blender and blend together.
Olive oil has a tendency to make the dressing a little more creamy. Pour over salad and enjoy.
Banana Triangles stuffed with Sweet Apple/Walnut Filling
Making Banana Leather
5 bananas 1/4 cup water Peel and cut bananas into small pieces Place in a blender with water and blend until smooth and creamy. Spread mixture out over dehydrator trays lined with teflex and dehydrate for about 10 – 15 hours.
Banana will peel off evenly when ready. Cut into medium size triangular shapes.
Filling:
2 Apples, cored and chopped
1 cup walnuts which have been soaked
1/2 TBSN cinnamon
1/8 cup agave syrup or 1/4 cup chopped and pitted dates
Chop apples and walnuts in a food processor.
Place in a large bowl and mix with cinnamon and sweetener or dates.
Topping or Dip:
1 cup cashews
5-8 dates–pitted and soaked
juice of 1 lemon
water to thin
Place in a blender — add water for desired thinness.
Take a spoonful of fruit mixture and place in the center of banana triangle. Fold down top corner.
Fold up each side corner so that the filling doesn’t fall out. Place on a flat plate. Do the same until mixture /or banana triangles are used. Serve as side dish or dessert with a cream topping.

A Sukkah
A Sukkah is a temporary structure which can be made of wood or other materials with a roof covering of branches known as sechach. The holiday of Sukkot is celebrated on the 15th day of the month of Tishrei (this year beginning on the night of October 2 ending with Simchas Torah/ Shemini Atzeret – Oct 9 & 10). It is one of the three biblical pilgrim festivals, when it was traditional for Jews to visit the Temple in Jerusalem.
The intermediary days, known as Chol Chamoed are days when Israelis do no work. The Sukkah, as described above is a fragile dwelling in which the ancient Israelites dwelt during their 40 years of wandering in the desert after the Exodus from Egypt. Throughout the holiday the sukkah becomes the living area of the house, and all meals are eaten in it. On each day of the holiday, members of the household recite a blessing over the lulav and etrog, or Four species. The Four Species consist of * Lulav (לולב) – a ripe, green, closed frond from a date palm tree
* Hadass (הדס) – boughs with leaves from the myrtle tree
* Aravah (ערבה) – branches with leaves from the willow tree
* Etrog (אתרוג) – the fruit of a citron tree
Those who live outside the Land of Israel celebrate Sukkot for the first 2 days and then the last 2 days with fewer intermediary days in between.
Each night of Sukkot, we invite ushpizim or special guests into the Sukkah. Abraham, Isaac, Jacob, Moses, Aaron, Joseph and David are invited into the sukkah. Each of the ushpizin offers us valuable Torah lessons.
Recipes
Appetizer with Italian Flavors
Zucchini

Olive Oil
Garlic
Peel zucchini and slice into thin rounds. Use a small cookie cutter shape to make stars, circles, or other shapes. This is great for kids to do as well.
Toss in a bowl with olive oil, garlic and fresh basil. Place on a plate and garnish with pine nuts.
In many places, it is customary to decorate the Sukkah with strings of fruits, vegetables, pictures of ushpizim, and other pictures of a decorative nature.
Choco-Coconut Truffles
1/2 cup raw chocolate powder or 3/4 cup chocolate nibs ground finely in a blender 2 1/2 cups shredded unsweetened coconut 1/2 cup coconut butter 1/2 cup maple syrup (this is not raw, but adds a different sweet flavor) Combine the chocolate powder/ground nibs, shredded coconut, and mix well. If coconut butter is solid, place jar in a dehydrator or in warm water to soften. Add maple syrup and mix all ingredients together. Roll into small mounds and freeze for about 1 hour.
Kids will enjoy rolling these.

Cukes, Granny Smiith apples, Bok Choy, gingerroot
Cucumber / Apple / Bok Choy Smoohie
2 green apples (Granny Smith or other)
2-3 cucumbers, peeled (the peel tends to be a bit bitter)
1 head of bok choy (you can subsititute Romaine)
1/2 inch gingerroot, peeled and chopped
Place all in blender with a little water and blend until smooth
You can also add cinnamon and cloves if you wish
This is a great energizing smoohie and can be used when breaking your Yom Kippur fast.
Cabbage Salad with Tahini Dressing
1/2 head white cabbage
1/4 head purple cabbage
2-3 carrots
1/2 red pepper
Shredded cabbage in a food processor using the shredding blade. Do the same with carrots. Julienne red pepper and add to other veggies in a large bowl.
Dressing:
1/4 – 1/2 cup tahini
Juice from 1-2 small lemons
2-3 TBS Caraway seeds
2 TBS white miso
Since the miso is a bit salty , keep at a minimum
Place tahini, lemon juice, miso in blender and blend —For even consistency , add a little water until desired thickness.
Mix into cabbage and veggies and mix in caraway seeds.

Yom Kippur is a day of spiritual introspection and teshuva (repentance). It is observed from sundown to sunset of the next day, this year beginning on the evening of September 27 through Monday, September 28.
So that one can alleviate some hunger and/or digestive problems during that period, it is important to plan your meal carefully before the fast. Here are some helpful tips:
Don’t overeat– even though you may think that eating more the night before will make you less hungry later, it can disturb your sleep patterns and stretch your stomach the next day.
If you are planning on eating some fruit, stick to those low in sugar or low glycemic so that you will not be thirsty.
Use a minimal amount of salt for the same reason as above
Keep in mind that animal foods are naturally very high in salt
Dairy products (also animal foods) are high in salt
High water content meals such as salads with olive oil/lemon dressing are great
Fill up on lots of vegetables
Don’t forget to include raw crackers and breads– these will help fill you up
Make dressings with tahini OR avocado and lemony flavors
try to minimize shoyu/tamari/miso and sea salts
wait at least 30 minutes after your meal and then drink water

Dragon Fruit
also known as Dragon Fruits are native to Asia, Mexico, Central and South America. They are grown here in Israel in Kibbutz Rosh Hanikra and in other places. The Importance of eating a Pitaya or Dragon Fruits have numerous benefits; they are great for those who have diabetes, weight challenges and other health issues. Besides the above, there are more benefits here:
Contains Carotene which helps maintain and equally improve the health of the eyes
*Contains fiber which enhances digestion and reduces fat
Its protein enhances our body’s metabolism
Calcium reinforces bones and aid in formation of healthy teeth
High in Vitamin C which helps heal cuts and bruises
High in phosphorus
Pomegranate Shake
Seeds and Juice from 1 pomegranate
1 banana, peeled and chunked
3/4 cup almond milk
2-3 dates, pitted
Place seeds and juice from pomegranate, banana, almond milk and dates into blender. Blend until smooth and creamy.
To Make Almond Milk:
1/2 cup almonds, soaked 8 -12 hours
water for soaking
2 1/2 — 3 cups of water
Soak almonds and after 12 hours, remove from soak water.
Place soaked almonds in a blender with 2 1/2 – 3 cups fresh water. Blend. Strain out pulp with a nutmilk bag or cheesecloth. Use almond milk in above recipe and freeze the pulp for future use (future recipes)

Our goals in Kitchen News from Israel are to educate and update you on the latest
information about the healthiest foods from the Land of Israel. We hope you will glean from this,
the latest information and recipes. We also hope to meet you in some of our educational and
tasty classes.
Shana Tovah!! All of us in the Land of Israel and worldwide are anticipating the upcoming Holy Days. It is both a time of rejoicing and of serious introspection; a time to celebrate the completion of another year while also taking stock of one’s life. Israel Gone Raw would like to wish everyone meaningful Chaggim!
Tastes of Rosh Hashannah—Sweet Beginnings with tasty and simple recipes

Apple / Nut Cookies
1 cup almonds (soaked and dehydrated)
1 cup hazelnuts (soaked and dehydrated)
1 cup of dried apples
¼- ½ cup honey or agave syrup
5-7 pitted and soaked dates
1 tsp vanilla
Place nuts in a food processor and grind until chopped evenly into small pieces. Add dried apples and dates and remove from food processor and turn into a bowl. Roll into small balls and press a hazelnut or almond down into the middle. If you do not dehydrate them, they will be much softer, but just as yummy.
Dehydrate from 12- 36 hours until hard, if desired.
These can be frozen for up to 3 months.
Apple Nut Cookies
Rimon (Pomegranate) / Avocado Salad
2 avocados
1 Pomegranate, seeded
½ bunch cilantro
juice from 1-2 lemons
2 TBN olive oil
Skin the avocadoes and seed the pomegranate
Cut avos into small squares and place in bowl with pomegranate seeds
Chop cilantro finely and combine in a bowl with avos and pomegranate seeds
Combine with lemon juice and olive oil, garnish with cilantro and serve

About some of the above ingredients:
Now back in season are avocados which have been shown to have an effect on blood serum cholesterol levels. Specifically, after a seven day diet rich in avocados, patients with hypercholesterol, showed a 17% decrease in total serum cholesterol levels. These subjects also showed a 22% decrease in both LDL (bad cholesterol) and triglyceride levels and 11% increase in HDL (good cholesterol) levels. Additionally, they have a high anti bacterial component.
Also in season again are pomegranates (rimon here in Israel). The seeds and juice from the seeds are high in vitamin C and phytonutrients.
Tradition holds that a pomegranate has 613 seeds to represent the 613 mitzvot in the Torah. The design of the pomegranate was woven into the high priest’s robes, and brass representations were part of the Beit Hamigdashs’ pillars. The pomegranate is mentioned six times inch Song of Solomon.

Registration is Classes is Mandatory and can be done by PayPal online secured server via www.israelgoneraw.com
If that is not an option, a check for class deposit must be received by
the Friday before the class is given. If you register for one class and then decide that you’d like to attend more, your price will be pro-rated so that you receive the discounts for registering for more than one class.
Pricing: — 1 Class is: 160 NIS
2-5 Classes: 150 NIS
6-8 Classes: 140 NIS
Pricing for Children: 50 NIS for Pizza Class or Dessert Class
40 NIS Each If Registering for both classes
When registering, you have the option of paying a deposit of 50 NIS for each class that you are registering for.
When registering for children, please pay in full
Parents must accompany children to class and participate in the class
as a registered attendee.
