Recipes~are all Peanut Free! *

Potato Latkes 

with Pine Nut Sour Cream or Apple Sauce

 

¾ cup golden flax seed

3/4 cup brown flax seed

Combine both and pulverize into a powderin a VitaMix, BlendTec or coffee grinder

1 cup of sunflower seeds, soaked for 2-3 hours—then process in food processor

3 large   onions

1 head cauliflower---process in food processor  --  and blend with:

½ cup olive oil

½ cup water     

Sea Salt

Pepper—freshly ground

Paprika   --- sprinkle on top

Combine flax seed powder with sunflower seeds.  Mix well and combine with cauliflower mixture, onions, olive oil sea salt, pepper.  Dehydrate at 110  on one side and then flip.

Latkes should be slightly soft on inside but not mushy. 

Serve with a chunky apple sauce or sour cream below:

 

Sour Cream  (Pine Nuts)

 

1 cup pine nuts

2 TBS.  White miso

3 TBS.  Lemon juice

2 TBS. Tahini

Blend all ingredients in blender and enjoy with latkes.

 

OR

 

 

Chunky Apple Sauce 

6 apples,  cored and peeled

1 tsp cinnamon

water

 

Peel and core apples, cut into chunks and place in blender with a little water

And cinnamon.  Blend until desired thickness is achieved.

Dragon Fruit Found at certain times of the year here in Israel looks very much like a magenta kiwi when you slice it opened.  It has similar seeds and texture, but tastes much more bland. 

 As I was walking towards the bus on the way home from a friend's home the other day, I had the urge to stop into a "Supersol" market.  For the first  time since I've been here in Israel I turned to the left as I walked into the store.  When I saw the YOUNG COCONUTS, I almost dropped to the floor.  I don't know how long they'll have them for, but the recipe below makes great use out of them for a delicious "raw" blintze recipe. 

               

Sweet Cream Cheese Filling For Blintzes

 

  1. coconut meat—1/3 cup

2.   coconut water—1/4 – 1/3 cup coconut water

    1. macadamia nuts—1/2 cup
    2. stevia powder---1/2-1 packet
    3. lemon --- juice from ½ lemon

 

 

                    Blintz  Wrap

 

Banana—1 large banana

Cashews—2 cups

Coco Water --- enough to make a smooth batter

Coconut meat—2 cups

 

Mix the above together in blender and spread onto dehydrator teflex sheets --- dehydrate until done and then flip and until done. 

 

* Peanuts can create problems for some people.  Peanut allergies affect some people as an immune reaction and are probably the most allergenic food.  If you think that you may be allergic, it is also a good idea to avoid not only peanuts, but all nuts which include almonds, cashews, brazil nuts, macadamias, and filberts.
